Buffalo Mozzarella wrapped in Lardo di Colonnata

 50 g Buffalo Mozzarella
 1 Slice of Colonnata Lard

Cut the Colonnata lard into slices and fry over high heat in a non-stick pan without adding oil. As soon as the lard begins to brown and all the fat melts, collect the slices on one side of the pan, tilt it so that all the liquid fat settles on the opposite side of the pan and at this point remove it with a spoon. Remove the slices from the pan and place them on absorbent paper.

Take the buffalo mozzarella and place it on the extreme side of a slice

Roll the slice around the buffalo mozzarella until it is completely wrapped

Take and serve hot
